Harvest Apple Salad
Bright and refreshing, this salad is a great way to enjoy this season’s bounty of local apples.
For the Vinaigrette:
2 Tbsp apple cider vinegar
6 Tbsp vegetable oil
2 tsp maple syrup
1 tsp Dijon mustard
1 Tbsp shallots, finely chopped
Fresh rosemary or basil, chopped
Salt and pepper to taste
For the Salad:
5 oz arugula or spring mix
1 Honeycrisp apple, sliced and julienned
4 ounces manchego, thinly sliced or shaved
1/2 cup caramelized pecans, chopped (optional)
¼ cup chopped dates
Make the vinaigrette by whisking all the ingredients together in a small bowl. Set aside.
Toss the freshly cut apple in a little of the dressing and season to taste with the salt and pepper. In a large bowl toss the arugula, apple, cheese, nuts, and dates with a small amount of the dressing and season to taste with the salt and pepper.
