Apple Cinnamon Loaf with Apple Cider Glaze
Loaded with the flavors of the season, this loaf is great for dessert or breakfast.
2 cups flour
2 tsp baking powder
1½ tsp DLM Ground Cinnamon
¾ tsp salt
¼ tsp DLM Ground Nutmeg
Pinch of DLM Ground Cloves
½ cup vegetable oil
½ cup DLM Old-Fashioned Applesauce
6 Tbsp sugar
6 Tbsp brown sugar
1 large Granny Smith apple, unpeeled and grated
1 cup DLM Apple Cider
2 Tbsp butter
1/2 cup powdered sugar
Pinch of salt
Pre-heat oven to 350ºF. Butter and flour an 8-inch loaf pan. In a medium bowl, whisk together flour, baking powder, cinnamon, salt, nutmeg, and cloves. In another large bowl whisk together oil, applesauce, sugars, eggs, and apple.
Fold the dry ingredients into the wet ingredients until just combined. Transfer to prepared pan and bake for 50-60 minutes or until a tester comes out clean. Let cool on rack, then remove from pan and cool completely,
Prepare the glaze by bringing the apple cider to a boil in a small saucepan. Reduce over medium-high heat until reduced to 1/3 cup, about 10 minutes. Add butter, powdered sugar, and salt and continue to cook until syrupy and slightly thick, about 5 more minutes. Cool and then drizzle over cake and serve.
