What should I do if mold develops on the cheese?

Natural cheese is a living product, and surface mold can occasionally appear. How to handle it depends on the color of the mold: Green or Blue Mold: Don't panic! It is perfectly safe to trim away green or blue mold. Simply cut off at least 1/2 inch around and below the mold spot, keeping the knife out of the mold itself so you don't contaminate the rest of the cheese. Once trimmed, the remaining cheese is completely safe and ready to enjoy. Red, Orange, or Black Mold: If you spot red, orange, or black mold on your cheese, it should be thrown away entirely, as these types of mold can penetrate deeper into the cheese and affect safety and quality.
