Meet the DLM Family

  • Scott Fox has been in the bakery business for 30 years and has been with DLM since 1996. He started out as an apprentice, eventually taking classes at the AIB (American Institute of Baking). After working in wholesale production bakeries and for four years in a retail shop in Historic Roscoe Village in Coshocton, Ohio, Scott went on to the University of Akron, where he served as Executive Pastry Chef until joining DLM in 1996. Scott’s special qualifications include his 1995 training in the making of artisan breads with the Bread Bakers Guild in France.

The DLM Patisserie

You see, at DLM our Pâtisserie produces pastries of note daily: classics as well as modern twists, all clean and fresh, made from scratch with organic eggs, real vanilla, the highest quality butter, and other fine ingredients. Apricot Tart

A sweet butter crust filled with an almond cream and apricots, then topped with an apricot glaze and sliced almonds. Perfect for breakfast, or topped with ice cream for dinner.

The Caribbean

This tropical dessert starts with a coconut Dacquoise layered with mango jelly, coconut crunch, and pineapple compote, and is topped with vanilla chocolate mousse.

Carrot Cake

From a great old-fashioned recipe, made with carrots, nuts, pineapple, and raisins, and frosted with a smooth cream cheese icing.

Chocolate Ganache Tart

Experience the flavors of Hawaii! We start with a baked Macadamia tart shell, than fill it with a creamy chocolate ganache, topped with fresh whipped cream, Macadamia nuts, and chocolate shavings.

Chocolate Mousse

A chocolate lover’s delight! A traditional favorite made with dark chocolate, finished with artistic decoration.

Cream Puff

We begin with a light airy cream puff shell baked here at DLM. We fill them with cooked custard, topped with fresh whipped cream then drizzled with chocolate.

Crème Brûlée

An American favorite in either Traditional or Brown Sugar. A smooth custard baked with vanilla beans. Freshly caramelized for each customer.

Éclair

The Éclair begins with pâte à choux made here at DLM. Then baked into a light airy shell, layered with pastry cream custard, fresh whipped cream and topped with chocolate.

Flourless Decadence Torte

This is a great dessert for those allergic to gluten and for those who are not. Treat your palate to this rich melt-in-your-mouth torte. Made only of chocolate, egg whites, sugar, and butter.

Gâteau aux Trois Chocolats

A rich dark, white, and milk-chocolate layered Bavarian cream on top of a chocolate Génoise, topped with chocolate mirror icing.

Grand Tiramisú and Tira Cup

An Italian favorite made with ladyfingers soaked in coffee syrup, layered with light mascarpone cream, dusted with cocoa powder, and topped with whipped cream.

Key Largo Key Lime Tart

A sweet, buttery tart shell painted with chocolate and filled with a tart Key lime custard made of Key lime juice, eggs, and butter. Topped with fresh whipped cream sprinkled with lime zest. Light and flavorful.

Napoleon

This is a traditional European treat consisting of flaky sheets of puff pastry made from scratch, baked and then layered with fresh pastry cream and whipped cream. Topped with fondant and chocolate.

Peach Party Pillow

We first take a palmier, then add fresh pastry cream and the most flavorful, juicy Prima peaches we can find, added whipped cream, another palmier, more whipped cream, a fanned peach slice, and a sprinkling of powdered sugar. This is made to share…but will you?

Royale

Soft Meringue cookie base topped with a hazelnut praline and crumbled wafer mixture, then layered with dark chocolate mousse. Finished with artistic decoration.

Sacher Torte

A thin chocolate Génoise layered with chocolate and raspberry mousse, topped with a chocolate curl.

Strawberry Pillow

We start building this with a palmier, then add fresh pastry cream, a layer of fresh strawberries smothered with whipped cream, then top it with another palmier, more whipped cream, a fanned strawberry, and a sprinkling of powdered sugar.

Tarte aux Fruits

Freshly baked sweet crust filled with pastry cream and fresh fruit, then glazed with apricot jelly. A classic!

Tarte aux Citron

A Parisian treat made of a sweet buttery tart shell filled with a tart lemon custard made of lemon juice, egg, cream, and butter. Topped with powdered sugar.
