with New DLM Homemade Cheese Spreads
Back in January we decided to expand
our selection of DLM Signature Cheese Spreads. A novel idea,
I thought, except for one thing—I knew nothing about
creating new cheese spread recipes. So I did what any manager
worth their keep would do when faced with a problem they didn’t
know how to solve: I enlisted the help of someone much smarter
than myself. I called on the aid of Dorothy Lane Market’s
very own Chef, Carrie Walters. Carrie teaches classes at the
DLM School of Cooking and is also responsible for creating
many of our newer Deli salad recipes.
Once I had a knowledgeable person like Carrie on my side,
I felt confident that together we could make this idea a success.
We started by using only the finest ingredients we sell in
our stores, from chocolate ganache made by Ghyslain to Spectrum
Organic Mayonnaise. By doing so we were able to create cheese
spreads that not only taste better, but also are better for
you than any others out there.
The next time you stop by our Specialty Cheese Departments,
ask for a taste, and pick up a container or two. These new
spreads are perfect, whether you are enjoying them with a
nice bottle of wine or just sitting back watching the game
with a cold beer. Here are some you just have to try. Pick
your favorite!
Asiago and Roasted Garlic Spread
The piquant flavors of aged Asiago and fresh roasted garlic
meld together to create a spread that is truly delicious.
Try spread on a loaf of our Classic Italian for the best garlic
bread you will ever taste.
Blueberries and Cream Spread
Chock-full of blueberry goodness, spread this on a toasted
bagel for the perfect addition to your morning routine.
BLT Cheese Spread
We use nitrate- and nitrite-free DLM Uncured Bacon along with
fresh sun-dried tomatoes, herbs, and spices to deliver a classic
sandwich combination in a totally unique package.
Buckeye Cheese Spread
This great mixture of organic peanut butter and chocolate
ganache is sure to please any sweet tooth. Try our Buckeye
Cheese Spread on a fresh toasted cinnamon sugar bagel for

Danish Gouda and Nut
Made with our most buttery and creamy Danish Gouda and fresh
roasted pecans, this is a classic snack that you will not
be able to get enough of. I like to enjoy this spread on Carr’s
Croissant Crackers with a good IPA.
Emerald Isle Pub Spread
I came up with the idea for this spread because I wanted one
that would reflect my Irish heritage, and I think that with
this bright green wonder you will agree that we hit the mark.
It’s packed full of creamy Irish Cheddar, with horseradish
for an added zing.
Nut House Spread
This is the spread for nut lovers everywhere. Chock-full of
toasted pecans, walnuts, and almonds, this is one spread you
are sure to go nuts over.
Olympian Goat Spread
This combination of tangy goat cheese, fresh pesto, and sun-dried
tomato is a great way to get your Mediterranean fix when spread
on a bagel or lamb burger.
Strawberry and Cream Spread
This fruity and creamy spread is made with all- natural Boar’s
Head Cream Cheese and DLM Strawberry Preserves for a sweet
spread that is great for bagels, toast, or biscuits.
Three Italian Cheese Spread
Containing a powerhouse combination of Parmesan, Asiago, and

Irish Soda Bread — A Seasonal Treat
Every year we make Irish eyes smile with this special treat. As
the name implies, it’s a traditional bread from Ireland that
incorporates baking soda rather than yeast. Along with other traditional
ingredients such as premium flour, buttermilk, sea salt, and sugar,
we enliven our rendition with butter, currants, and a few caraway
seeds. We hand-shape and bake each loaf daily all month long. Our

R Collection 2004 Monterey Chardonnay
Classic Monterey fruit signature, with lots
of Granny Smith apple and lemon peel nuances and a pleasant vanilla
bean and oak finish. You will find this wine pairs nicely with Dorothy

R Collection 2003 California Merlot
A blend of grapes from both Napa Valley vineyards and a vineyard
in the Sierra foothills, this is a very lush wine, with tons of
black cherry, blackberry, and blueberry fruit with nuances of wood
smoke and dried herbs in the middle. It would pair well with your
favorite lasagna or ravioli dish. $11.99 save $2.00
R Collection 2003 Napa Valley Cabernet
Sauvignon
Primarily made from grapes grown on the winery’s estate vineyard
in Rutherford, this wine is aged for 16 months in French oak barrels,
adding to the overall complexity of an already impressive wine.
Tons of plum and cherry fruit with a bit of cassis is the backbone
of this wine, while it is nicely rounded out with hints of spice
and sweet toasty oak. Try this wine paired with a Coleman rib-eye!

Irish Culture
Important to the survival of any culture is food. The tastes, smells,
textures, and colors of the food are important pieces of the culture
puzzle. Food marks the seasons and the celebrations of the year
which attract family and friends to bond together. Corned Beef and
Cabbage is a part of the Irish food culture. Before the days of
refrigeration, beef was salted down or brined during the winter
months so that it was preserved come spring-time. In Ireland this
peasant meal was served for Easter dinner after the long meatless
Lenten fast. Today more people in the U.S. than in Ireland eat this
meal on St. Patrick’s Day. Whether they do it as a nostalgic
reminder of their Irish heritage, or to just try to capture some
of that “luck of the Irish”, they are enjoying great
food.
In celebration of the Irish culture we are trying
to capture some of those traditional tastes, smells, and textures
for you. Once again we will be making our own Corned Beef. Choice
cuts of Coleman Natural Beef brisket and round have been brined
in a blend of pickling spice and topped with a blend of peppercorn
and bay leaf to give you that traditional taste. Cook long and slow
till fork-tender. The meat will retain a pink color even after cooking,
due to the curing process fixing the pigment of the meat. The smell
of this meal slow-cooking with cabbage will give any man, Irish
or not, a healthy appetite.

Women and Depression:
A Holistic Approach
As we emerge from a winter that
really hasn’t been, I, for one, am counting the days
until warmth and sunshine. We may have gotten a little break
in the weather, but the seemingly endless damp, dreary days
are enough to make the mood plummet and the appetite soar
(chocolate, anyone?!). For many folks, moodiness in the winter
is just part of the package for living in this area of the
country. And with our busy lifestyles, we all experience negative
feelings along the way – they are an integral part of
our human experiences. We can’t live and love fully
without confronting them at some point. But when feelings
of depression or anxiety are pervasive and interfere with
one’s daily life and relationships, it’s no longer
the “wintertime blues”.
Symptoms of depression may include changes in eating habits
and sleeping patterns (too much or too little), withdrawal
from people and activities, fatigue and loss of energy, loss
of pleasure, agitation or sluggishness in movement or thought,
decreased libido, poor concentration, and feelings of worthlessness,
self-reproach, or excessive guilt. More women than men are
diagnosed with depression, according to counselor Chris Myers.
Some theories suggest that women are more in tune with their
emotions and therefore more likely to express feelings of
emptiness, which are associated with depression. Chris says
that most of the women she sees for depression are married
moms, which the research confirms. “Often” she
says, “depression is a signal that one’s life
needs more meaning.” She advocates that women pursue
creative interests, and actively maintain relationships with
other women. “By taking up hobbies, building friendships,
and strengthening their spiritual growth, women can infuse
their lives with meaning.” .
This month, through the Healthy Living Department, we are
offering a unique and informative four-hour workshop entitled
Women and Depression: A Holistic Approach, presented by Chris
Myers and me. Chris, a licensed clinical counselor for over
20 years and Alexander Technique teacher, specializes in women’s
issues, including depression, anxiety, and healing from childhood
trauma. She will explore a number of topics including:
• management of energy and stress
• the “superwoman” syndrome and “burnout”
• realistic expectations of ourselves and our relationships
• building a support system
• the role of movement in helping depression
• spirituality and depression
As a nutrition educator, I will discuss the relationship
between depression and diet, with an emphasis on a whole foods
approach for prevention and to support the body during times
of stress. We will address emotional eating, as well as the
roles that glandular health, hormonal imbalances, and blood
sugar regulation play in emotional wellness. Detailed information
on the role of nutritional supplements will be given. We will
also look at the impact of weather and environmental issues
on mood.
The workshop will take place at the DLM Washington Square
School of Cooking on Saturday, March 18 from 9:30 a.m. to
1:30 p.m., and space is limited to 32 participants. The cost
is $60.00 (required at registration), and includes a special
DLM box lunch, a gift bag from the Healthy Living Department,
a collection of whole food recipes, and the opportunity to

Cherry
Chicken Lettuce Wraps
This recipe is perfect for weeknight meals. Quick, easy, and
delicious!
Ingredients:
- 2 Tbsp Vera Jane’s Extra-Virgin Olive Oil
- 2 Tbsp minced fresh gingerroot
- 1¼ lb DLM Boneless, Skinless Chicken Breast, sliced
very thin or cut into small cubes
- 3 Tbsp rice vinegar
- 4 Tbsp teriyaki sauce
- 1 Tbsp honey
- ½ cup dried cherries, coarsely chopped
- ½ lb (8 oz) shredded carrots (about 2 cups)
- 1 bunch green onions, sliced
- Crushed chilies (optional)
- ½ cup sliced almonds, toasted
- 12 romaine lettuce leaves
Directions:
Heat oil in a large skillet over medium-high heat.
Add ginger and chicken and sauté until cooked through,
about 8 minutes. Combine vinegar, teriyaki sauce, and honey
in a small bowl. Add sauce to chicken in the skillet, reduce
heat to medium. Add cherries, carrots, green onions, and chilies
(to taste). Cook, stirring constantly, for 2 minutes. Stir
in almonds and remove from heat. To serve, spoon chicken mixture
onto center of each lettuce leaf. Makes 12 wraps (about 4
servings) Per wrap: 139 calories (33% calories from fat);
5g total fat; 1g saturated fat; 27mg cholesterol; 243mg sodium;
10g total carbohydrates; 13g protein.

Go Bananas
Orange Dip
Ingredients:
- 2 large bananas, peeled, cut into chunks
- ½ cup plain or banana yogurt
- 2 to 3 oranges, sectioned
Directions:
Place banana chunks into a blender and add yogurt. Blend until
thoroughly mixed and smooth. Place dip in a serving bowl on
a platter and surround with orange sections.
For variety, also try dipping strawberries, kiwi, apples,
bananas, or pineapple. Or stir into a fruit salad as a dressing.
Makes 1 cup.

School of Cooking Favorite!
Banana-Stuffed French Toast
Perfect for brunch and sure to become a family favorite for
those leisurely weekend mornings! For more breakfast and brunch

Ingredients:
- 2 Tbsp plus 3 Tbsp unsalted butter
- 2 Tbsp plus 1/2 cup sugar
- 2 Tbsp water
- 2 large ripe bananas, peeled, cut into 1/2-inch-thick
rounds
- 2 cups whole milk
- 6 large eggs
- 2½ tsp cinnamon, divided
- ¼ tsp vanilla extract
- 1 lb whole loaf white or egg bread, ends trimmed, bread
cut into (6) 1¼–1½” thick slices
- 1/3 cup light brown sugar (packed)
- ¼ cup quick-cooking oats
- ¼ cup all-purpose flour
- ¾ cup sliced almonds
- Powdered sugar
- Warmed pure maple syrup for serving
Directions:
Preheat oven to 350°F.
Heat 2 tablespoons butter in heavy large skillet over medium
heat. Add 2 tablespoons sugar and water and stir until sugar
dissolves and mixture is foamy. Add bananas; cook until tender,
stirring occasionally, about 5 minutes. Transfer to small
bowl; cool. (Can be prepared 4 hours ahead. Cover and chill.)
In a large bowl, whisk together milk, eggs, ½ teaspoon
cinnamon, vanilla, and ½ cup sugar. Pour into large
glass baking dish.
Lay one bread slice on a cutting board and make a 2-inch
incision into the crust, cutting ¾ of the way into
the side to form a pocket inside the bread. Be careful not
to pierce the other side of the bread. Repeat for each slice.
Spoon 2 to 3 tablespoons of the banana mixture into each pocket.
Place bread in egg mixture; let soak 10 to 15 minutes, turning
once.
In a medium bowl, combine brown sugar, oats, flour, and remaining
2 teaspoons of cinnamon. Mix in 3 tablespoons butter until
moist clumps form. You can make the streusel ahead and keep
chilled in an airtight container. Bring to room temperature
before using.
Carefully remove bread from egg mixture and place on a heavy
large baking sheet lined with parchment paper. Top with streusel
and sprinkle with almonds. Bake until golden brown and filling
is hot, about 25 minutes. Sprinkle with powdered sugar and
serve hot with warm maple syrup. Serves 6.

Spiced Peach Filling
Try the recipe above with a creamy spiced peach filling!
It’s simply heavenly!
Ingredients:
- 2 Tbsp unsalted butter
- 2 Tbsp brown sugar
- 1½ cups sliced peaches (frozen)
- ½ tsp ground cinnamon
- Pinch of freshly ground nutmeg
- 2 Tablespoons cream cheese
Directions:
Heat 2 tablespoons butter in
heavy large skillet over medium heat. Add 2 tablespoons brown
sugar and stir until sugar dissolves and mixture is foamy.
Add peaches, cinnamon, and nutmeg and sauté until tender,
stirring occasionally. Remove from heat. Add the cream cheese
and stir until cream cheese is melted. Transfer to small bowl
and set aside to cool.
