Recipe
of the Week: Peasant
Sauce
Long
ago, the Italian peasants may have simmered a
marinara sauce for hours over a hot hearth fire.
Now you can make a Peasant Sauce in as little
time as one hour, using our Honestly Better® DLM
San Marzano Whole Peeled Tomatoes D.O.P. Use as
a full-flavored tomato sauce on pasta, a baked
potato, or veal parmigiana. For an easy dinner
delight our choice of pasta was La Casa del Grano
Tradizionali Medi combined with the Peasant Sauce!

"Let Them Eat Cake" - King Cake, That Is!
February 5
is Fat Tuesday. For the event, make sure to get
one of our made-from-scratch Mardi Gras King
Cakes! We bake them fresh, using unbleached,
unbromated flour, real butter, sugar, water, whole
eggs, yeast, and sea salt. The coffee cake is
in the form of a crown and is topped with a cooked-butter
icing, bearing the bright colors of royal jewels.
Remember to hide the plastic baby in the cake
(be sure to tell your guests). Tradition dictates
that the person who finds the doll will be the
king or queen of the party - and will bring the
cake to the next celebration. Varieties include
plain, cream cheese, apple, cherry, and raspberry.

Get Ready for Valentine's Day
Randall
Price has traveled throughout Europe as the host
of the Travel Channel's Europe's Classic Inns.
A frequent contributor to Fine Cooking magazine,
he is currently working on a cookbook about entertaining.
For Randall's first Chocolate Dessert Essentials
class in January 2007, the problem was that there
were too many chocolate desserts that he considers
essential. That is still the case, so we decided
it would be best to make this an annual class.
Here are this year's picks for chocolate-essential
recipes that should be in anyone's baking repertoire.
With a balance of do-ahead and last-minute, simple
and sophisticated, there is something for every
type of chocolate lover: Chocolate Marquise
with Pistachio Cream; Devil's Food Cake; Chocolate
Dipped Caramels; Dark Chocolate Tarte; and
Spiked Hot Chocolate.
