Cooking Your Turkey
The Food Safety and Inspection Service branch
of the USDA has issued a new recommendation for
a single minimum internal temperature requirement
for safely cooked poultry. Scientific research
indicates that foodborne pathogens and viruses
are destroyed when poultry is cooked to an internal
temperature of 165°F. Please note that there
is much printed material in circulation that has
the old "safe cooking recommendations", including
the bags that our DLM turkeys are packaged in.

Selecting
your Thanksgiving Day Wine
When
selecting a wine for your Thanksgiving turkey
there are a few things to keep in mind. Rule number
one is to consider the flavor of turkey. It is
fairly simple, but add some spice and flavorful
stuffing, and you have some complexity on your
side. If you go the standard route, a nice Sauvignon
Blanc or dry Gewürztraminer will work well, but
don't forget about lighter reds such as Pinot
Noir and Beaujolais. If you choose to spice it
up and use an aggressive stuffing, the possibilities
are greater. Step up the flavor of the wine to
match the food: Pinot Noir, Merlot, and Barbera
are some nice bets. Also it would be a shame to
discount some great "dry" rosés, as they tend
to be the perfect accompaniment to "the bird."
