Banyuls Vinegar (Vinaigre de Banyuls)
This vinegar from southwest France is some of the most interesting we've ever tasted. It's made from the naturally sweet wine of Banyuls, in the region of Languedoc Roussillon. It takes 5½ years to make a batch, aged in oak, so you can imagine how it develops such complex aromas and flavors. As our importer friend Kitty suggests, we agree that it shows aromas of walnut, vanilla, and spice. It makes a great vinaigrette with any good olive oil, but our favorite combination by far is with J. Leblanc's amazing walnut oil, also from the south of France.
