Springtime in Paris Pastry Show Tickets on Sale!
Join us Thursday, April 19 from 7 to 9 p.m. at the DLM Community Room in Springboro for the third annual Springtime in Paris Pastry Show. Taste the newest spring pastries created by famous pastry chef Ghyslain and the DLM Pâtisserie team. All of these creations are all-natural, using ingredients such as organic eggs, European-style butter, and real vanilla. Enjoy a sampling of wines and Belgian ales and learn how to pair them with your favorite pastry. Tickets may be purchased in advance for $30 at our service booth or for $35 the day of the show. Fresh Morel Mushrooms From Oregon
Rich and intensely earthy in flavor, these wild mushrooms are among the least adaptable for cultivation. Because their elongated dome has a sponge-like appearance, they are sometimes called "sponge mushrooms". Morel mushrooms should not be served raw - their flavor comes through best in cream sauces and with chicken and veal. Since the growing season for these exceptional mushrooms is only three to four weeks, be sure to plan a meal this week using morels.

Chaumes
Chaumes is a cow's milk cheese from the Périgord region in southwest France, made with traditional cheese-making processes. A traditional Trappist-style cheese, it is a soft pale cheese with a rich, full-bodied flavor and smooth, creamy texture. Its aroma is generated by the cheese's bright tangerine-orange soft rind which appears after several washings. Aged for four weeks, Chaumes is great as a table cheese and also for grilling.

Port-Salut
Port-Salut was originally invented by Trappist monks during the 19th century at the abbey of Notre Dame du Port du Salut in Entrammes. The monks, many of whom had left France to escape persecution during the French Revolution of 1789, learned cheese-making skills as a means of survival and brought those skills back with them upon their return in 1815. A semi-soft cheese that is easily recognized by its orange rind, it is rather mild and sweet in flavor with a smooth and velvety texture.
