Bergkäse
Bergkäse (German for mountain cheese) is an Austrian version of Gruyère. The Rupp family, which has been making cheese for the past three generations, operates on a simple philosophy: "better milk makes better cheese". That is why the raw cow's milk that is used to make this great cheese comes from cows that feed only on the fresh fodder in mountain meadows. Using this high-quality milk creates a cheese that is delightfully nutty and spicy, full-flavored and aromatic when melted. Great cubed in salads or melted atop a hot ham sandwich. $8.99 lb • save $2.00 lb with Club DLM card through Tuesday, February 6.

Winter Braising
Who can resist a rich-and-hearty, fork-tender meal napped with a flavorful sauce that you only get from slow cooking? Our recipes are perfect for the do-ahead weekend cook - almost all braised dishes are best made ahead and served the next day, with the exception of fish braises, which have all the benefits of braising but with minimal time. Recipes include Short Ribs with Root Vegetables and Red Wine; Osso Buco Milanese; Spicy Asian Chicken with Star Anise and Cabbage; Lamb Shanks with Pomegranate Sauce; and Sea Bass and Tomatoes with Fennel.
Chef Carrie Walters • Tuesday, February 6 • 6 p.m. - 9 p.m. • $60.00
