Oyster Stuffing

1½ cups onions, chopped
3/4 cup celery, chopped
2 Tbsp butter
1/4 cup parsley, finely chopped
1½ tsp poultry seasoning
1/2-1 tsp salt
Freshly ground pepper
4 cups day-old bread cubes, crusts removed
1 egg beaten
6-16 oz shucked oysters

Sauté onions and celery in butter until tender. Remove from heat and add parsley, poultry seasoning, salt, and pepper. Pour mixture over bread cubes, add beaten egg and toss to blend. Process the oysters in a food processor, if desired. Add the oysters and toss again. Stuffing should be moist. Add some oyster liquid, if desired. Place stuffing in a well-greased baking dish and bake at 350°F for 25 to 30 minutes or until lightly brown.
