Mexican Quesadillas

8 oz Chihuahua or Monterey Jack cheese, coarsely grated
1/2 to 1 jalapeño pepper, chopped
(8) 6-inch flour tortillas

Warm a frying pan or griddle. Place one tortilla on the pan or griddle; sprinkle with 1/4 of the cheese and 1/4 of the chopped peppers. Top with another tortilla. Cook the filled tortilla for one minute; turn over, and cook the other side for one minute. Cut into 6 triangles, and serve immediately with your favorite salsa.
