Spicy Ginger Green Bean Salad

1/4 lb linguine, cooked and chilled
1 lb fresh green beans
1½ cup celery, thinly sliced
2 cups red bell pepper, thinly sliced
1/2 cup green onions, sliced
1/3 cup cilantro
1/4 cup seasoned rice vinegar
1/4 cup soy sauce
2 Tbsp sesame oil
2 tsp grated ginger
2 cloves garlic, finely minced
1/2 jalapeño pepper, seeded and finely chopped

Cook green beans until tender (about 3 to 5 minutes). Drain and rinse with cold water. In a large bowl, combine

linguine, green beans, celery, bell pepper, onions, and cilantro. To prepare dressing, whisk remaining ingredients

together in a small bowl. Add to salad and toss. Serve chilled.

Makes 8 servings
