|2 1/2 lbs red new potatoes|
|4 cloves garlic, finely minced|
|1/4 cup Vera Jane's Extra-Virgin Olive Oil|
|1 Tbsp salt|
|Freshly ground pepper|
Preheat oven to 350°F. Scrub the potatoes and prick each one about 6 times with a fork. Place in a shallow roasting pan, and roast for 2 hours. Cut each potato in half.
Toss the potatoes with the garlic, olive oil, salt, and pepper in a large bowl. Let stand for 30 minutes or more before serving. Serve at room temperature.
