Country Greek Salad

4 cups salad greens (Romaine, Escarole, etc.)
1 clove garlic
1 tsp salt
1 small red onion, sliced into rings
2 tomatoes, cut into wedges
1 small green pepper, cut into rings
1/2 cup feta cheese, crumbled
8 kalamata olives
4 to 8 anchovies (optional)
1 tsp dried oregano
2 Tbsp Aunt Vera's Italian Red Wine Vinegar
Salt and pepper to taste
1/2 cup Vera Jane's Extra-Virgin Olive Oil

Wash, dry, and tear salad greens into bite-size pieces. Crush the garlic clove, and mash to a paste with the salt. Add greens, vegetables, cheese, olives, anchovies, and oregano. Sprinkle with the Aunt Vera's Italian Red Wine Vinegar. Salt and pepper to taste. Drizzle with the Vera Jane's Extra-Virgin Olive Oil.
