Basic Rice Pilaf
| 1/2 cup diced onion |
| 2 Tbsp butter |
| 1 cup long-grain white rice |
| 2 cups chicken broth (hot) |
| 1 bay leaf |
| Salt and pepper, to taste |
Sweat the onion in the butter. Add the rice and stir to coat it with the butter. Cook the rice until it is golden and has a nutty aroma. Add the hot stock and seasonings. Bring to a boil. Cover the pot and transfer it to a moderate oven. Simmer for 18 to 20 minutes or until the liquid is absorbed and the rice is tender.
