|1 DLM Coniglio Ripieno (Italian-style stuffed rabbit)|
|2 to 3 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|Salt and pepper to taste|
Preheat oven to 350°F. Place roast in a small roasting pan or on appropriate baking sheet. Drizzle liberally with the olive oil and season with the salt and pepper. Roast in the oven until the internal temperature reaches 160°F (about 15 to 20 minutes a pound).
Remove from the oven and let rest for at least 10 to 15 minutes. Cut kitchen twine off and carve off in thin slices and serve. We suggest 1/2 lb per serving.
