|1 DLM Porchetta (Italian-style pork roast)|
|2 to 3 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|Salt and pepper to taste|
Preheat oven to 350°F. Place roast in a small roasting pan or on appropriate baking sheet. Drizzle liberally with olive oil and season with salt and pepper. Roast in the oven until the internal temperature reaches 140°F (about 15 to 20 minutes per pound).
Remove from oven and let rest for at least 10 to 15 minutes. Cut kitchen twine off and carve in thin slices. We suggest 1/2 lb per serving
