Watermelon Salad

Adapted from Everyday Foods

2 Tbsp Aunt Mary’s White Wine Vinegar
2 Tbsp Vera Jane’s Extra-Virgin Olive Oil
Salt and Pepper
1 bunch green leaf lettuce (about 12 oz), washed and torn into pieces
¼ red onion, thinly sliced
2-3 cups chilled watermelon chunks
4 oz feta cheese, crumbled

In a small bowl, whisk together vinegar and oil. Season with salt and pepper. In a large bowl, combine lettuce

and onions; toss with dressing to taste. Gently toss with watermelon and feta, and serve.
