Sweet Mandarin Vinaigrette Chicken Salad

(1) 10-oz pkg spinach leaves
2 DLM Boneless, Skinless, Whole Chicken Breasts, cooked and chilled
1/2 tsp Chinese five spice powder
(1) 8-oz can juice-packed pineapple chunks (reserve 2 Tbsp of juice)
(1) 11-oz can mandarin oranges, drained
1/4 small red onion, thinly sliced
1/2 cup sliced almonds, toasted (optional)
3/4 cup DLM Sweet Mandarin Vinaigrette

Wash and spin dry spinach leaves. Cut chicken into bite-sized chunks and toss with five spice powder. Place spinach, chicken, pineapple, oranges, onion, and almonds in a large bowl. Stir together reserved pineapple juice

and vinaigrette; pour over salad and toss well. Season, to taste, with salt and pepper. Makes 4 servings
