Sweet Japanese Spinach with Sesame Seeds
|2 Tbsp sesame oil|
|10 cups fresh spinach, washed, drained, and torn|
|2 Tbsp brown sugar|
|Salt, to taste|
|3–4 Tbsp sesame seeds, toasted*|
Heat oil in a large skillet over medium heat until hot. Add the spinach 3-4 cups at a time. Cook and stir until
spinach is wilted, then continue to add more until all the spinach is wilted. Move spinach to the side of pan and place sugar in the center. When the sugar is melted, stir in the spinach to coat. Add salt, to taste. Transfer spinach to serving dish and top with sesame seeds.
* To toast sesame seeds, heat seeds in a pan over medium heat until lightly browned and fragrant.
