Sweet Boston Salad

1 large head Boston lettuce, washed, drained, and torn into pieces
3 oz julienne-cut carrots
¼ cup dried cranberries
1 Gala apple, cored, peeled, and cut into small pieces
Dressing:
Juice of 1 lemon
3 Tbsp Vera Jane’s Extra-Virgin Olive Oil
4 Tbsp sugar
1/2 tsp salt
1/4 tsp pepper

In a large bowl place torn lettuce, carrots, cranberries, and apple. In a small bowl whisk together lemon juice and olive oil; once combined add sugar, salt, and pepper. Just prior to serving add dressing to salad and combine.
