Mashed Potatoes with Fresh Mint

|2 lbs red potatoes|
|¼ cup chopped fresh mint|
|1/2 cup unsalted butter, cut into chunks|
|2 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|Salt and freshly ground pepper|
Add potatoes to boiling, salted water and cook uncovered for about 20 minutes or until tender. Drain potatoes and place hot potatoes in a mixing bowl. Add half of the chopped mint and mash until potatoes are chunky.
Stir in butter until melted. Combine potatoes with olive oil, remaining mint, and salt and pepper to taste.
