Mini Quesadillas with Pico de Gallo
|1/2 cup (heaping) Garden Highway Pico de Gallo|
|4 taco-size flour tortillas|
|5-6 Tbsp Iberico cheese, shredded|
Preheat oven to 425°F. Place two tortillas on a foil-lined baking sheet and top each with 1/4 cup pico de gallo and about 3 Tbsp shredded Iberico cheese. Cook for 4 to 5 minutes, top with a second tortilla, and cook for an additional 2 minutes.
