Pear and Apple Cobbler

Adapted from Claire Criscuolo's Claire's Corner Copia Cookbook.

6 Granny Smith apples, cored and cut into twelve pieces
6 Bartlett pears, cored and cut into eighths
Juice of a lemon
1/4 cup dark brown sugar, firmly packed
1 tsp vanilla extract
1 tsp cinnamon
Topping:
1 1/2 cups rolled oats
1 1/2 cups whole wheat flour
1 cup granulated sugar
1 Tbsp baking powder
1/4 tsp cinnamon
1/4 cup unsweetened applesauce
4 Tbsp unsalted butter, melted
1 cup 2% milk

Preheat the oven to 350°F. In a large bowl, combine the apples, pears, and lemon juice. Add brown sugar, vanilla, and cinnamon. Toss well. Pour into a rectangular 15x10-inch glass baking dish.



Prepare topping:

In a bowl, combine oats, flour, sugar, baking powder, cinnamon, applesauce, melted butter, and milk. Mix well with a spoon and spread over the apple and pear mixture.



Bake approximately 1 1/4 hours or until the fruit is softened and the topping is golden brown. Serve hot or at room temperature.
