New York Apple Cobbler

This recipe, from Maida Heatter's Book of Great Desserts, is unusual, wonderful, and easy to prepare!

Topping Ingredients:
1/4 tsp salt
6 oz cheddar cheese, grated
1 cup flour
1/2 cup light brown sugar, firmly packed
1/2 cup butter
Apple Mixture:
3 lbs tart apples, such as Granny Smith
3/4 tsp nutmeg
1/2 cup light brown sugar, firmly packed
2 Tbsp Brandy (optional)
1/2 tsp cinnamon

Butter a 2qt baking dish and set aside. Use an electric mixer to beat together the grated cheese and butter. Blend in the salt, flour, and sugar; set aside.

Peel, quarter, and core the apples. Slice each apple quarter into 5 to 6 slices. Toss the slices with the sugar, cinnamon, nutmeg, and optional Brandy. Place the slices in the prepared dish and spread evenly. Use your fingers to crumble the topping over the apples, covering them as completely as possible. Gently press down on the topping to make a smooth layer.

Bake in a preheated 350° oven, 40 to 50 minutes or until apples are tender and the topping is golden brown. Serve warm as is, or topped with ice cream.
