Tomato Relish

Adapted from Cuisine.

2 Tbsp Vera Jane's Extra-Virgin Olive Oil
1 tsp sugar
1 medium red onion, slivered
1/4 tsp salt
4 Roma tomatoes, seeded and coarsely chopped
1/8 tsp freshly ground pepper
2 Tbsp Aunt Angie's Balsamic Vinegar of Modena
1 Tbsp fresh thyme, chopped

Heat oil in a sauté pan over low heat. Add onion and cook until caramelized, 20 to 25 minutes. Stir in tomatoes, vinegar, sugar, salt, and pepper. Cook 8 to 10 minutes or until the relish is thick and chunky. Add chopped thyme. Serve the relish with hamburgers and toasted hamburger buns our DLM Rustic Country rolls.
