|2 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|1 tsp sugar|
|1 medium red onion, slivered|
|1/4 tsp salt|
|4 Roma tomatoes, seeded and coarsely chopped|
|1/8 tsp freshly ground pepper|
|2 Tbsp Aunt Angie's Balsamic Vinegar of Modena|
|1 Tbsp fresh thyme, chopped|
Heat oil in a sauté pan over low heat. Add onion and cook until caramelized, 20 to 25 minutes. Stir in tomatoes, vinegar, sugar, salt, and pepper. Cook 8 to 10 minutes or until the relish is thick and chunky. Add chopped thyme. Serve the relish with hamburgers and toasted hamburger buns our DLM Rustic Country rolls.
