Egg Puff

1 1/4 cups egg substitute or 5 whole eggs
1/4 cup flour
1/2 tsp baking powder
1/4 cup chopped onion
1/4 cup chopped red bell pepper
1 cup Trauth fat-free cottage cheese
1/2 cup grated reduced-fat Cheddar cheese (or regular)
1/2 tsp salt

Preheat oven to 350°F. Coat an 8-inch square baking dish with non-stick cooking spray.

Pour the egg substitute into a large bowl. In a small dish, stir together the flour and baking powder. Pour over the egg substitute and beat until completely blended.

Beat in the onion, red pepper, cheeses, and salt.

Bake for 30 to 35 minutes or until puffy and set. Makes 4 servings
