Seafood à la Ritz
|1 lb white seafood fillets (Tilapia, Gray Sole, Haddock, Cod, or Trout)|
|Salt and pepper to taste|
|1 lemon, freshly squeezed|
|2 Tbsp butter|
|1/2 cup cracker crumbs (rich, buttery, round crackers)|
Season fillets lightly with salt, pepper, and lemon juice. Dip in melted butter, then in cracker crumbs. Place in shallow baking dish with 1 tablespoon of water. Bake in preheated 450ºF oven, 10 minutes per inch of thickness. Serve fillets with lemon wedges.
