Cranberry Orange Salad

1 pkg fresh cranberries
1 cup water
2 cups sugar
1 pkg (4-serving size) cherry JELL-O
1 can mandarin oranges
1/2 cup chopped pecans or walnuts

Cook cranberries, sugar, and water together until cranberries pop. Set aside and mash with potato masher. Add JELL-O, mandarin oranges, and nuts. Pour into dish or mold, and refrigerate to set. Serves 4 to 6

No time to cook? Make canned cranberry sauce special by adding 1 Tbsp freshly grated orange zest, 1 tsp freshly grated ginger root, and 2 tsp Port wine to a 16-oz can of whole cranberry sauce.
