Tomato Slices with Feta and Basil
|2 Tbsp Aunt Angie's Balsamic Vinegar of Modena|
|1 tsp coarsely ground mustard|
|1/2 to 1 tsp salt|
|1 tsp freshly ground pepper|
|3 Tbsp vegetable oil|
|2 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|5 ripe tomatoes|
|1/3 cup chopped fresh basil|
|1/3 cup crumbled feta cheese|
Combine vinegar, mustard, salt and pepper. Slowly whisk in oils.
Slice tomatoes and arrange on a plate. Spoon vinaigrette dressing over tomatoes, and top with basil and cheese.
