Spinach Quiche
| 2 medium potatoes, diced |
| 1 small onion, diced |
| (1) 10-oz pkg frozen, chopped spinach, thawed, well drained |
| 1 cup low-fat mozzarella cheese |
| 1 cup low-fat Cheddar cheese |
| 1 cup turkey ham, diced |
| (3) 4-oz cartons egg substitute, thawed |
| 1½ cups non-fat yogurt |
| Salt, freshly ground pepper, and DLM Garlic Powder to taste |
Combine all ingredients. Pour into (2) 8-inch pie pans. Bake at 425°F for 15 minutes; reduce temperature to 350°F and bake 30 minutes or until knife inserted 1-inch from edge comes out clean.
