Crunchy Brown Rice

1 cup wild rice blend
2 cups water or broth
1/3 cup chopped red bell pepper
1/3 cup chopped celery
1 bunch scallions, chopped with some green tops
1/3 cup minced fresh parsley
1/2 cup chopped pecans (optional)
2 Tbsp Vera Jane's Extra-Virgin Olive Oil
Salt and freshly ground pepper, to taste
1 to 2 tsp Aunt Angie's Balsamic Vinegar of Modena (optional)

In a medium saucepan, combine rice and liquid. Bring to a boil and then simmer for 45 to 55 minutes. Cool until almost room temperature. Stir in remaining ingredients and season with salt, pepper and balsamic vinegar, if desired.

Serve warm as a side dish or at room temperature for a salad.Makes 4 servings
