Raspberry Vinaigrette

The best-quality ingredients make the best salad dressing. Toss room temperature vinaigrette with salad greens just before serving. (Use vinaigrette sparingly.) Store unused vinaigrette, tightly covered, in the refrigerator.

1 tsp coarse salt
1 clove garlic, minced
3 Tbsp raspberry vinegar
2/3 cup Vera Jane's Extra-Virgin Olive Oil

Mash salt and garlic together; stir in vinegar. Whisk in olive oil. Makes 3/4 cup
