Best-quality ingredients make the best salad dressing. Toss room temperature vinaigrette with salad greens just before serving; use sparingly. Store unused vinaigrette tightly covered in the refrigerator.
|2 Tbsp lemon juice|
|1/4 tsp salt|
|1/4 tsp dry mustard|
|Several grinds of fresh pepper|
|1/2 cup Vera Jane's Extra-Virgin Olive Oil|
|1 tsp finely minced shallots or scallions and/or fresh or dried herbs, such as chives, tarragon, basil (optional)|
Combine lemon juice, salt, mustard and pepper. Whisk in oil and optional shallots, scallions or herbs. Makes 10 Tbsp
