Citrus Dip

Tangy, light, and refreshing!

1 lemon, lime, and orange freshly squeezed
Grated peel of each fruit
1 egg
1 cup sugar
1/2 cup whipping cream

In a medium saucepan, stir together grated peel and juice of a lemon, lime and an orange. Add a beaten egg and 1 cup of sugar. Cook over medium heat, stirring constantly, until mixture has boiled for 1 minute. Remove from heat; cool. Cover and refrigerate.

Whip 1/2 cup heavy cream and fold into mixture. Use as a dip for fresh fruit. Makes 2 cups
