Baked Chicken Breast
This method of cooking chicken results in moist, flavorful chicken. Be careful not to overcook it as it will dry out. Use the meat for salads or sandwiches, or eat "as is."
|Thinly sliced onion|
|Fresh herb, such as thyme|
|DLM Boneless, Skinless Chicken Breasts|
|Salt and freshly ground pepper|
|Fresh lemon juice|
Generously butter a shallow baking pan. Preheat oven to 375°F. Scatter onion, parsley, and thyme over the pan and lay the breasts out flat on top of the herbs. Sprinkle with salt, pepper, and fresh lemon juice (use about 1 lemon/8 breasts). Place in the oven and cook 20 to 25 minutes, or until just done — the flesh should feel firm when pressed with a finger. Do not overcook!
