Dried Tomato Slices & Cheese on Toasted French Bread

Serve these as an appetizer or as an accompaniment to a salad course.

French bread
Vera Jane's Extra-Virgin Olive Oil
Dried tomato slices
Asiago, Pecorino, Romano, or Mozzarella cheese, grated

Slice French bread. Brush the cut surface with olive oil, and place under a broiler until brown. Turn the bread, brush with olive oil, and return to the broiler to toast.

Place dried tomato slices on the cut surface; top liberally with cheese. Place under the broiler until the cheese melts. Serve hot.
