Tomato and Onion Salad
Use vine-ripened or hydroponic tomatoes and sweet onions for this spectacular, easy summer salad.
|1 small clove garlic, minced|
|1/2 tsp salt|
|1 Tbsp fresh lemon juice|
|2 Tbsp wine vinegar|
|1 Tbsp Dijon mustard|
|1/2 cup Vera Jane's Extra-Virgin Olive Oil|
|Freshly ground pepper, to taste|
|Fresh basil leaves, chopped|
Mash garlic and salt together in a small bowl. Whisk in remaining ingredients. Store in refrigerator; serve at room temperature. Makes 3/4 cup vinaigrette
Overlap slices of tomato and thinly sliced sweet onion on a platter. Drizzle with vinaigrette and chopped fresh basil leaves.
