Sweet Potato-Orange Casserole

A delightful taste combination!

2 lbs sweet potatoes
1/3 cup sugar
3 Tbsp butter
1 tsp salt
1 tsp grated orange rind
1/2 tsp grated lemon rind
1/2 cup orange juice

Cook potatoes in their skins in boiling water until tender, about 20-25 minutes. While still hot, peel and mash. Measure 4 cups of mashed potatoes, add remaining ingredients, and beat until fluffy. Put in a buttered 1-quart casserole and bake at 350°F for 30 minutes. Makes 8 servings
