Sea Scallops

Scallops—about 1/4 lb per person
Flour
Clarified butter (see recipe)
Minced fresh parsley
Lemon pepper, optional

Dust scallops lightly with flour. Melt butter in hot skillet. Cook scallops quickly, about 1 to 1½ minutes per side. Garnish with parsley and lemon pepper, if desired.



Hints:

For best taste, prepare scallops on the day of purchase.



Maintain fresh flavor by placing scallops in a covered glass dish in the coldest section of the refrigerator.



Do not allow scallops to rest on ice or in water.
