Spinach and Potato Gnocchi
A quick, flavorful, and nutritious vegetarian entrée!
|1/4 cup Vera Jane's Extra-Virgin Olive Oil|
|6 large cloves garlic, minced|
|1 lb fresh spinach leaves, chopped|
|1/4 tsp crushed red pepper flakes|
|2 lb potato gnocchi|
|Salt and freshly ground pepper, to taste|
Fill a 6-8 quart pot with water and bring to a boil.
Heat the oil in a skillet over low heat. Add the garlic and sauté until softened. Add the spinach and red pepper flakes. Raise the heat slightly, cover, and cook about 15 minutes, stirring occasionally, until tender; keep the spinach warm. Add salt and pepper.
Cook the gnocchi in boiling water according to the package directions. Drain and add to the spinach. Stir to combine well. Serve immediately.
