Three-Cheese Polenta Pizza
|(1) 18-oz pkg polenta, cut into 12 slices|
|2 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|1 cup ricotta cheese|
|1/2 cup mozzarella cheese, shredded|
|1/4 cup grated Parmesan cheese|
|1/4 tsp coarsely ground black pepper|
|1/2 tsp kosher salt|
|6 plum tomatoes, cut into 1/4-inch dice|
|1/2 cup loosely packed fresh basil leaves, sliced|
|Basil sliced into thin strips (optional)|
Brush the polenta rounds with oil, and grill or sauté in a large skillet until lightly browned and warm. Meanwhile, in a medium bowl, mix ricotta, mozzarella, Parmesan, pepper, and 1/4 tsp salt until blended.
Toss the tomatoes with the sliced basil and add 1/4 tsp salt.
Using the same skillet over medium heat, spoon ricotta mixture over polenta slices and top with tomato mixture. Cover skillet and cook polenta pizza about 5 minutes until it is hot and cheese has melted. Sprinkle with thin strips of fresh basil before serving, if desired.Makes 12 servings
