Tofu Pockets

16 oz firm organic tofu
Thin slices of button mushrooms
1 tsp minced garlic (or to taste)
1 tsp minced fresh ginger (or to taste)
Sesame oil
1 tsp Chinese Five Spice
1/2 cup Veri Veri Teriyaki marinade

Preheat oven to 425° F. Rinse the tofu in cold water. Cut in half lengthwise. Slice a pocket on one side. Insert thin slices of mushroom, garlic, and ginger. Brush each side with sesame oil. Sprinkle top with Chinese Five Spice.



Bake on a cookie sheet for 20 minutes. Baste with additional sesame oil, and bake 10 minutes more.



Serve over Veri Veri Teriyaki-sauced rice or rice noodles.
