Hawaiian Smoothie

Adapted from Doug Johnstone's recipe created for Kettering Medical Center.

(1) 6-oz can pineapple juice, unsweetened
(1) 8-oz can crushed pineapple
2 Tbsp apricot jam
(1) 12.3-oz pkg silken firm tofu
1 ripe banana

Combine all ingredients in a blender. Whip until smooth. Chill or blend with a few ice cubes. Serve cold. Makes (4) 8-oz servings

Per serving: 176 calories; 3g total fat; 1g saturated fat; 0mg cholesterol; 39mg sodium; 32g total carbohydrates; 8g protein;
