Goat Cheese Bruschetta
|6 plum tomatoes, seeded and chopped|
|1 tsp fresh lemon juice|
|Salt and freshly ground pepper|
|(1) 4-oz pkg Couturier Goat Cheese|
|18 DLM Mini Toasts|
|3 Tbsp chopped fresh mint|
Combine tomatoes and lemon juice. Season generously with salt and pepper.
Preheat oven to 350°F. Spread goat cheese over toasts; arrange on a baking sheet. Mound tomatoes on toasts, dividing equally. Bake until heated through, about 8 minutes. Transfer bruschetta to platter. Sprinkle with mint.
