Baked Apples with Almonds and Raspberries

6 Golden Delicious apples
1/2 fresh lemon
6 oz sliced almonds
4 oz dried raspberries
6 Tbsp butter, melted
3 Tbsp honey
1/3 tsp ground cardamom
1/2 tsp cinnamon
1 cup apple cider

Preheat oven to 400°F. Peel and remove stem from apples. Using a melon baller, scoop out the core of each apple, making a 1-inch wide hollow center, leaving bottom of apple intact. Rub lemon half over apples. Arrange apples, hollow side up, in a glass baking dish.

Combine almonds, raspberries, butter, honey, cardamom, and cinnamon. Pack mixture into hollows of apples. Sprinkle any remaining mixture around apples. Pour apple cider over apples and into dish. Bake apples uncovered until tender, occasionally basting with juice mixture, about 45 minutes.
