Ginger Salmon

2 tsp Vera Jane's Extra-Virgin Olive Oil
1 Tbsp honey
1 Tbsp Dijon mustard
2 tsp fresh ginger, grated
1 lb Shetland Salmon Fillets

Preheat oven to 400°F. In a small bowl, whisk together the oil, honey, mustard, and ginger. Brush salmon fillets with the olive oil mixture. Place salmon in a baking dish; bake for 10 minutes or until salmon flakes easily with a fork.
