Spicy Summer Salad

1 fresh pineapple, cored and chopped (reserve juice)
1 large red bell pepper, chopped
1/2 red onion, chopped
1/2 seedless cucumber, chopped
2 ribs celery, chopped
1 ripe tomato, chopped
1 lb fresh lime, juiced
1 tsp dark chili powder
1/3 cup Vera Jane's Extra-Virgin Olive Oil
Salt and freshly ground black pepper to taste
3 dashes hot sauce

Combine pineapple, red bell pepper, red onion, cucumber, celery, and tomato. In a small bowl, whisk together reserved pineapple juice, lime juice, chili powder, and olive oil. Season to taste with salt, pepper, and hot sauce. Pour dressing over salad and toss.
