|3 oz baby spinach|
|1 Tbsp Vera Jane's Extra-Virgin Olive Oil|
|1½ lbs strawberries, rinsed and quartered|
|3 Tbsp brown sugar|
|1½ Tbsp Aunt Angie's Balsamic Vinegar of Modena|
|1/4 tsp ground black pepper|
Place washed baby spinach in a large bowl and drizzle with olive oil. Combine quartered strawberries with brown sugar and let stand at room temperature for about 10 minutes. Add vinegar and pepper to strawberries and toss to coat. Pour over spinach and serve. Serve with a strawberry vinaigrette if more flavor is desired.
